This South American cocktail bar and eatery Cartel pays homage to the intense and diverse cultural and culinary makeup of South America, while the food menu represents some of the restaurant’s favourite South American dishes, designed to be shared alongside their list of festive and creative cocktails, curated by international mixologist Grant Collins (Gin Lane, Potato Head Bali, Ku De Ta/W Bali).

Serving an array of South American inspired beverages, international mixologist Grant Collins’ cocktail creations, tequila and mezcal, show why Cartel is more about the journey than the destination. Grant spent months exploring and sourcing a range of over 50 tequilas and over 60 imported mezcals. The Mexican Rose is another stand out cocktail that features rose petal infused tequila-Cointreau-rose and lime syrup-edible tequila and cactus rose in a stunning presentation with flavour and class.
Cartel as a concept aims to pay homage to the intense and diverse cultural and culinary makeup of South America, with vibrant and experiential drinks and tapas style food menu that reflects the best of Mexico, Peru and Columbia. Cartel’s thriving drinks and beverage offerings features a list of classic and signature margaritas as well as a range of creative house cocktails and mezcal based drinks.
The drinks menu is fun and experiential, where Grant uses some classic Aztec ingredients including “chapullines” (grasshoppers) and “sal de gassano” (spiced worm) to create unique Aztec twists on classic cocktails. The “compatir” (sharing) list features more unique offerings from Collins including the “Tequila Tower” & “Margarita Tree”.
Not only are the drinks an impressive part of what Cartel has to offer but the food adds a mixture of inspired dishes from Mexico, Peru and Columbia. Perfect for sharing with friends, the spiced crunchy cauliflower bites with Mexican spice are bursting with delicious flavour and spices.
